Cheap, Easy, and Nutritious?

This post is going to talk about dinner, not women (sorry, guys). 

We're a busy family, but one of the most important things on the to-do list is still feeding the kids healthy food.  When there was one child in the family (who slept a lot), we used to have lots of good home-cooked meals.  With two children (one of which doesn't particularly like to sleep), the definition of a good home-cooked meal has changed.  Basically, anything that doesn't come from a drive-thru will work.

Breakfast consists of cereal, oatmeal, or toast with butter or peanut butter.  Lunch is home-cooked by their daycare center during the week.  Dinner is a little more complicated.  I try to make a dinner with three basic components - proteins, carbs, veggies.  Here are some typical dinners:

Spaghetti with pasta sauce, no meat: the spaghetti noodles have protein and carbs, and the sauce has veggies.  This often gets topped off with dinner rolls for a treat.

Chicken nuggets or fish sticks, veggies (green beans, corn, or peas), and rice or potatoes.

Mac & cheese with veggies (green beans, corn, or peas)

Snacks are usually yogurt, fruit, or cereal.

  1. A cheese crisp (from the microwave) or half a jam sandwich are some of Jade's after school snacks. She also loves baby carrots, grape tomatoes, or cucumber slices.

    We eat a lot of meat, so none of our dinners are "quick", but I usually make enough for leftovers to save effort another day. We also have applesauce at pretty much every dinner - not as healthy as fresh apples, but at least it doesn't cause me to have an allergic reaction. :)

  2. We eat a lot of meat too, but the quickest thing -- your favorite meat and barbecue sauce in the crockpot. Voila! :)We do tacos a lot which have all the food groups and are pretty easy. The kids like chicken parmesan and potato-chip chicken. Just coat it in sour cream, roll in crushed Lay's chips and bake.

  3. We have taco night too. I also like using the crock pot. I'm usually the chef so we also like pork chops and homemade pizza is a winner with our kids. Ill also use the pressure cooker for beef roasts it only takes about 40 minutes and while it cooks i'll make the sides. I don't make anything that takes more than an hour.

  4. One of the kids does like meat, one doesn't. But I definitely like meat dishes, especially ones that are baked and can be made the night before.

  5. One of the easiest crockpot dishes is salsa chicken: throw in any chicken (frozen or not, breasts or thighs) a jar of salsa and a packet of taco seasoning. Cook on low all day and you have really tender, shredded chicken for tacos, burritos, tostadas, etc.
